So, what kind of things, or "tasks" might Zeus or Poseidon or Hades expect in order to grant someone the right to walk the Olympian, or Atlantean or Hadean Road?

My starting point for such a task would be something comparable to the Labors of Heracles.
- Slay a terrible monster
- Capture a terrible monster
- Recover a sacred artifact
- Clean a massive mess
That's a very good place to start; and it means we have precedent from the myths themselves.
One interesting question is how would the labors demanded by Poseidon or Hades be different from those demanded by Zeus?

This one just popped into my head. For Poseidon's favor clean up the garbage floating in the Pacific Ocean on Modern Earth.

That would be a good current-events thematic task; though Poseidon might just pull a "Namor" and have his aspirants declare war on the surface-world.

If that were the case then I could image Poseidon granting rights to walk the Atlantean road to someone if they were to capture Athens on his behalf and rename it after him.

Hah! That's an excellent one; either capture or otherwise connive to have it renamed, I would say.
