Corwin uses the Pattern to do things like call for a forest fire while Benedict is chasing him.  Ganelon, in his role as a normal human who can't tell what's going on, is forced to assume that some sort of "sorcery" is afoot.  Presumably Corwin had done a bit of pattern-shifting at some point during his tenure in Avalon and word got out even before he banished Ganelon (Lance also calls him a sorcerer, remember?)

And perhaps the rules of the Shadow Avalon were more magic-friendly.
If it may be based on an Arthurian land, perhaps the idea of a 'Merlin' type of wizard existed there, and this would be an easy skill for Corwin to learn in his Shadow.
