Your PCs don't just encounter a Beholder; it's actually a Blue Beholder, or a White Beholder, etc... What sort of quirks, might they have?
Different combination of Eye Rays?
Instead of the main eye being a cone of anti-magic, maybe it's a cone of heat metal or darkness. Stuff like that.
There's a sort of option for this, with beholderkin.

Or the central eye could be a death ray, or a disintegration ray, or a ray of random banishment.....and that sucker is used a lot. Some Beholders could be a crazy challenge. Shucks, that's most beholders.
Pretty much allready a thing.
Theres beholders, Spectators, and at least 4 other eyeball monsters in D&D alone. Not even counting Undead Beholders and a Beholder Vampire of all things.
Theres also been a few variant beholders with different eye powers. Sometimes through study or experimentation. Sometimes magic. Sometimes mutations. Spelljammer allowed for all manner of unusual beholders due to their species focus.
