Yep, that's why I am looking for a different fantasy RPG to scratch my itch.  Not sure what it will be.  Even in 5e when I didnt use the base monster hitpoints the players still go through them, although it took a little longer.   It's way too unbalanced for my tastes.

Run stuff listed a few levels higher. Or best of all, do a sandbox with a variety of adventures/dungeons of different levels scattered around, and let the players choose what to do. 5e is really good for sandboxing, partly because of its loose and lenient design.
