I'm currently DMing Curse of Strahd in two places, online on Fridays and at Encounters. I've been looking around for anything that I can add to spruce things up, especially when it comes to random events. I know of "Encounters in the Mist" over at the DM's Guild, and I've been swapping in some random events with the events in that document. But is there any other set of random encounters out there? I like having a bit more variety in my random events.

Have you looked at the older Ravenloft products (Ravenloft was once a campaign setting of its own)? Try Children of the Night: Vampires, or one of the other CotN sourcebooks. you can probably pick it up at an online PDF store like RPGNow.
I also suggest watching gameplay videos on youtube of any of the later Castlevania video games for inspiration.

Johnn Four's 1,372 Roadside Encounter Ideas (https://roleplayingtips.com/roadside-encounter-ideas/) is pretty much system agnostic and features truckloads of encounters you might use in "misty" campaign. And it's free! You can find 650 fantasy city encounter seeds on his page (also free). There's also 150 benign urban fantasy encounters (https://roleplayingtips.com/tools/150-benign-urban-fantasy-encounters/) article there.
I don't have it on me, but I recall reading 30 things that might happen... (http://www.rpgnow.com/product/100971/30-Things-Can-Happen) by Creative Mountain Games. I remember seeing things you might find useful there.
Not exactly a random encounter table, but Desborough's 100 Horror Adventure Seeds (https://index.rpg.net/display-entry.phtml?mainid=14693&editionid=16571) is a great source of inspiration. A bit pricey, but worth it.
You can also use the advanced Taroka encounter building system from the Ravenloft boxed set.

This is a nifty little book. It's not written for any particular RPG system so you have to build up statblocks and flesh out some of the particulars, but it is designed to give you scads of plot hooks and the like.
