My date range would be 2280s (movie era) through roughly 2385 (right before Picard Season 1 I think). I prefer earlier in that range, less wizbang tech to deal with, but I'll admit the later ships (up through maybe 2400) give me a nerd boner.

I have seen stats for 26th+ century ships for ST: A, and I just do not want to deal with magic time travel ships. Or stupid ass refits of thousand year old ships for that matter.

I set my last game in the immediate aftermath of the Dominion War.  There were several thread going on with the Cardassian Union basically ceasing to exist and the Klingon Defense Forces being a shadow of their former self among other things.  The main overarching threat was going to the the Tzenkethi taking advantage of the weakness of the major powers to make their move.  I didn't get that far.  The players had a skirmish against a couple of ships from a dissident Klingon faction that wasn't keen to go back to being peaceful and then game collapsed.

Immediately post-Dominion War is one of the most politically interesting times (and had the advantage of being the furthest point in the timeline for quite a long time (Voyager technically was the furthest, but was so divorced from the rest in terms of distance that it could largely be ignored).

The damage dealt to the Federation, Klingons, Romulans and Cardassians gave any GM a lot of freedom as to where they wanted things to go and losses meant you could pull off the old school feel of the campaign's hero ship being the only one available.

My own campaign was set just before the breaking of the Khitomer Accords and the onset of the Dominion War.  I used Narendra Station, distant from DS9... basically the setting's equivalent of The Triangle from FASA.
