Title: Lamentations of the Flame Princess: one product

If I was going to buy just one thing that would set me up for understanding Lamentations, and give me enough adventure that I could theoretically convert to another system (5e), what would be the best choice?

There is a quite a lot of free material for LotFP, including the player's handbook (sans artwork), the referee's guide and at least two adventures. Better than any Man is the more ambitious one of those I read

I don't think there really is one common thing about LotFP.

You have the angsty stuff. The artsy stuff. The cutesy stuff. The stuff that tries to be edgy just to be edgy. You have the ones where the party is almost certainly doomed for just being the normal D&D party. A lot of them are almost parody products.

I'd say Better than Any Man, Qelong, and a Red & Pleasant Land are by far the best products because they are actually legitimate attempts at making a useable gaming product.

Better than any man is probably one of the top LotFP product and it is free so there is no excuse for you not having it !

The playerhand has a free version so you can check it out at no cost.

It has been already written but Vorheim Quelong and A Red and Pleasant Land are all very nice products.

A Red & Pleasant Land makes a healthy alternative to the classic AD&D adventure's Dungeonland and The Land Beyond the Magic Mirror. However, you have to put on your House of Leaves reading glasses, as its layout is non-standard, if not intriguing.

The best books are Vornheim and A Read & Pleasant Land by Zack S, but those are not strictly LotFP. So I would say Scenic Dunnsmouth, an amazing "toolkit" adventure.

Vornheim. It's fantastic and it's usable with any vaguely D&Dish system or campaign. The best RPG fantasy city product ever.

This. My experience with Better than any man has been great, and I didn't even use D&D.
