How about a setting, where humans are the exception; and not the average?

Man at Arms

A setting where humans always seem and feel out of place.  A setting that doesn't cater, to humans.  Humans are far fewer in number, and are just trying to hang on. Perhaps, long after a cataclysmic event?  Perhaps, something has twisted reality itself?  Perhaps, something else?

We actually ran a 4E campaign with the premise that humans had gone extinct after invading the fantasy realm and all that remained of them were the half-elves, half-dwarves, and half-orcs who inherits the conquests of their human ancestors. Full-blooded elves, dwarves and orcs were extremely rare (unplayable as PCs), having been driven from their lands into the hidden corners of their world.

The chief conflict of the campaign  was an invasion of the half-elven kingdom by the half-dwarven one. The PCs were all younger members of the king's family/advisors who narrowly escaped the siege of the castle and sought to save their land from the invaders.

ElfQuest is one setting that comes to mind, which has an official RPG adaptation from Chaosium. Apparently, there's an upcoming official Planet of the Apes RPG - and there was Eden Studios' earlier _Terra Primate_ RPG that was an unofficial adaption.

I played a few gonzo post-apocalyptic RPGs like Gamma World where unmutated humans were the rare exception. I seem to recall our Mutant Year Zero game had all PCs being mutants.

Going a little farther afield, there's a recent kids book series called Wings of Fire that is all about dragons, where humans are largely-ignored creatures called "scavengers" by the dragons.

I can think of a few settings.

First is the Barsoom series by Edgar Rice Burroughs.  It's more a case of a few humans being far away from home rather than a matter of head count.  If you aren't familiar, the first book in the series is Princess of Mars.  This is a great series that comes from the greatest pulp author IMO.  He also did a few other series, including Tarzan.

Another is Titan AE.  A scifi movie where earth has been destroyed and humans are refugees scattered to the stars.  Humans are out numbered and unwanted.  An underrated animated movie from 2000.

For that matter, Star Trek is a scifi setting where humans are clearly outnumbered and rare.  It's just that Humans are at the center of the Federation so the get the limelight.

Not sure if this is quite what you're thinking of, but The Damned trilogy by Alan Dean Foster is about an alien culture making contact with earth. They discover that humans are both physically superior to all the other alien races, and more importantly, more psychologically adapted to violence. the aliens happen to be at war with another culture, and so despite their revulsion to violence, they are desperate enough to enlist human volunteers to help.

The series is about how humans integrate (badly) into the alien culture, and the concern about what the humans will do once the war is over... it's a great series and I love it because it's like an inversion of the alien invader/creature trope. Humans are the terrifying creatures to everyone else.
The notion of an exclusionary and hostile RPG community is a fever dream of zealots who view all social dynamics through a narrow keyhole of structural oppression.

Omega

Gamma World?
Humans have a notable advantage in certain stats and robots and the like are more likely to not shoot first and vacuum up the ashes later. On one of the editions they were even better, being the end product of an attempt to disaster proof the survivors of the cataclysm. Apparently works because by the time of Gammarauders humans are about the only race once again.

Palladium books After The Bomb. Humans exist, but they're the bad guy NPC's. You play mutated animals that are intelligent.

Mouse Ritter.  You play field mice protecting your city and other mice from things like cats, owls, and horrific rattlesnakes that make fighting dragons seem tame.

Tiny D6 Mecha vs Monsters.  You can play the Kaiju.
I'm glad for you if you like the top selling game of the genre.  Me, I like the road less travelled, and will be the player asking we try a game you've never heard of.

I'll expand on Tiny D6 Mecha vs Monsters.

There is no built in setting, or even a scale. A pilot could be in a power armor suit, a tree sized Gundam, or a skyscraper sized megazord.

Or they may not even be a pilot.  The rules are general enough to do lots of things with it. Be a kaiju, or an AI robot.

We came up with a setting where machines go forth thru space and terraform planets for human life.  However, no humans are coming.  We left it vague how long this has been happening. It's been long enough that the robots are now locked in a violent civil war on whether or not to give up on humans and live for themselves.

That would make humans special, and unique.
