I would love to play Mutants and Masterminds... I even went so far as to buy the book when it came out, but no one I know is running a game.
What about you? Do you have games you'd love to play, but haven't?
Spycraft and M&M are high on my list right now.
Mutants and Masterminds
Ring World
Darwin's World
Iron Heroes
Fading Suns
7th Sea
Paranoia XP

Fading Suns is a good game, I highly recommend it. I've actually played the original and the d20 variant (run by the author at Dragon*Con, in fact) and both were enjoyable.

Many years ago, I got hooked on the computer game, Emperor of The Fading Suns (http://www.the-underdogs.org/game.php?id=367), a Civilization-like game based off the Fading Suns setting. Ever since then, I've had an itch to play the roleplaying game, but never had the spare cash to pick up the books.
Oh another I'd like to investigate further: Exalted. :)
Of games I haven't tried, SLA sits high on the list. I'm also curious about trying the independent published Sorcerer. I guess I should also list M&M. I've never played it, and the little I GM'ed it hardly counts.
Mutants and Masterminds
Exalted
Stargate
Conan
True d20
Edit : I removed Kult from the list because I have played it. Once a long while ago and I forgot.
Mutants and Masterminds and Warhammer Fantasy Roleplaying 2E
Any supers game, I don't even care about the system. I just never have and I would really like to.
(NOT AN INVITATION FOR ADVICE ABOUT MERITS OF VARIOUS SUPERS GAMES. ;) )
Exalted and Werewolf: the Forsaken are on my want-to-play list if I can ever find someone to run it. I always get stuck being the GM for just about every game.
Hackmaster got it just haven't played it yet.
Oh there are so many...
Hackmaster
D20 Modern
Call of Cthuhlu
Mutants and Masterminds
All Flesh Must Be Eaten
Midnight
See my thread that I started about how do you get players to play new games... LOL
Hmm. True 20 -- it sounds intriguing. (C'mon, tax money!)
Exalted 2e -- which isn't out yet, but the buzz is very interesting.
Iron Heroes -- definitely as a player.
I'm sure that there's more, but that's all I can think of off the top of my head. :)
Conan d20
Hackmaster
The New Argonauts
True 20
Thieve's World d20
Yeah, you can add Thieve's World to my list as well. I just bought a bunch of the novels off Ebay really cheap and hope to find the time to read them all. The setting sounds very cool though.
AFMBE. Always wanted to play in a zombie game, I just don't want to run it.
Armageddon. Being a half-angel or sorcerer fighting against Cthulhu's zombie Nazi armies for an Archangel, Odin, and Ben Franklin's ghost is just too cool for words.
Nobilis. But first I'd have to understand Nobilis.
Iron Heroes - As DM or player preferably DM
Adventure! - I would love to run a game of this as soon as I get off my ass (and WoW) long enough to write up an adventure.
Changeling: The Dreaming - The red headed stepchild of the World of Darkness but I saw potential for fun there. But I wanted to play not run a game.
I'd love to get a chance to play Paranoia. I'm collecting pdf scans of as many of the books as I can.
Wraith: the Oblivion -- I think this game got a bad rap. It looks like it could be a lot of fun. Tops my list of "I wanna try it".
Iron Heroes -- looks cool and different. I'd like to see how it works in practice.
Any nWoD game, but W:tF in particular -- I was a fan of the oWoD (except W:tA, which I detested). I'd like to see what the new version is like, as it looks much improved. It kills me that W:tF looks like it might be the coolest of the new games.
Amber -- I doubt it'd become my favorite game, but it'd be interesting to try.
Exalted
Arcana Evolved
Iron Heroes
Eon (Swedish low-fantasy RPG)
In Nomine - I've got a serious jones for the whole angels 'n demons gettin' their war on thing, for some reason. Bought a lot of the books, but never managed to rustle up some schlubs to play it with me.
Demon: The Fallen - See above, amigo.
octaNe - Psychopostapocatroniclyptic. Too damn cool for words.
Meddling Kids - great little starter RPG for kids by Pandahead that I picked up at Origins last summer. I'll run this one sometime soon for my kids, I hope, 'cause I am all about the playing-RPGs-with-kids thing. I hear they're gonna do (or have already done) Meddling Spies too, which would rock. My kids love the Spy Kids movies, so they'd be all over it.

I'm waiting for the deadtree of True 20 Adventure Roleplaying...
Pendragon.
A post-holocaust game.
A supers game.
A sci-fi game.
I would love to play a good World of Darkness setting that includes all the supernatural beings... vamps, werewolves, everything. I have TONS of source material but haven't really played except a few sittings. There is just so much coolness there.
Additionally - for some reason - I wish I could play a serious Supers game. Any system would do. Every time my group plays supers of any genre it's not taken very seriously. The roleplaying is always weak, nobody really gets into it... it's always just "Clobberin' Time!". I personally have read enough comics and graphic novels that I can see the potential of a very serious and fun supers game.
