None of the limitations you mentioned are part of the game itself.  They're play style issues.  Some people want to play within the established Arthurian legend (whichever legend that is -- there are a few), some people want to stretch those boundaries and create their own Arthurian legends.  It's all in how the GM and players actually implement the game.  The contention that Pendragon doesn't simulate famous knights is like saying D&D only plays to low-level grunts.
