What version of Harnmaster has the most crunchy combat wholesomeness?

Looking at this summary, it appears that Harnmaster Gold is more full of detailed/realistic combat grit than either the first or second editions, but that source doesn't say much about the third edition other than it's by the publisher of the 2nd edition rather than the original author, and that the second edition tried to simplify things, so I'm guessing Gold is the most crunchy, but I'm wondering if 3rd edition offers any crunch that Gold doesn't and that a detailed combat maniac might miss?

No, it does not. Hârnmaster 3rd is very similar to Hârnmaster Core (or 2nd), in fact I don't know if there are any mechanical differences between HM3 and HMC.

Hârnmaster Gold is like an alternate evolutionary line. If Hârnmaster Core (and 3rd) was a simplification of Hârnmaster 1st, Hârnmaster Gold was a reaction to that, as if the author had thought "Simplify rules? Forget it!!" To sum up:

Simpler versions of Hârnmaster: Core and 3rd

More complex versions of Hârnmaster: 1st and Gold
