I hope y'all find these as entertaining as I do.

Latin motto generator: "If you desire to make your own Latin motto, but don't want to go back to school and take a Latin course, don't feel like learning Latin independently, and have no intention [to] employ professional translation services - this set of scripts is designed to offer some help." I wanted a motto for a NPC family, and this made it easy. The options are somewhat limited, but it's still fun to play with. Deus fideles defendit!

Fortified Places: "The aim of this site is to provide information on bastioned fortifications, primarily the work of Vauban and his contemporaries." Traditional castles were no match for artillery, and this is how military engineers responded to the challenge of the changing nature of siege warfare in the Early Modern period.
On weird fantasy: "The Otus/Elmore rule: When adding something new to the campaign, try and imagine how Erol Otus would depict it. If you can, that\'s far enough...it\'s a good idea. If you can picture a Larry Elmore version...it\'s far too mundane and boring, excise immediately." - Kellri, K&K Alehouse

Both very cool sites. The Latin motto one is fun to play with, and the fortress site includes such personal favorites as the Mont St. Michel, the fortress of Bouillon, in the Belgian Ardennes, St. Malo and Brest in Bretagne... very, very nice stuff. Lots of maps to just steal for our games. Change the names, and voilà! :)

Most of the pirate games out there are fantasy, not history, but I take your point.

Now I wouldn't mind so much if more of the focus was on the Mediterranean or Arabian Sea, instead of the redundant obsession with the Caribbean.
