how come the only classes we get to choose from are fighter, cleric, druid, rogue, wizard, psionicist?  what about paladins, Rangers, monks, barbarians, bards, and sorcerers?

Each cycle has 20 user titles.  Paladin is in one of the cycles, as is ranger and some of the others. With 20 titles per ladder one quickly runs out.
